 The Johnson family dinner table was usually a calm place—if you ignored the nightly arguments about who was stealing whose fries. But tonight was special. Tonight, Mom had decided to cook something “fancy” after binge-watching a cooking show: blackened chicken with mashed sweet potatoes and green beans.

“Everyone, sit down! Dinner is ready,” Mom announced with the tone of a general sending troops into battle.

Dad shuffled in, sniffing the air suspiciously. “It smells like a campfire in here. Did something… explode?”

“That,” Mom said proudly, “is the blackened chicken. It’s supposed to smell smoky.”

“Smoky? Or like you left it in the barbecue pit of Hades?” Dad muttered, sitting down.

At that exact moment, ten-year-old Benny poked the chicken with his fork like it was an alien artifact. “Mom… it’s black. Like, actually black. Is this food, or did you invent a new material for NASA?”

“Eat it,” Mom ordered, “before I blacken you too.”

The mashed sweet potatoes at least looked promising. Creamy orange mounds sat in a bowl, practically glowing with buttery goodness. Thirteen-year-old Lily scooped a heroic portion onto her plate, only to pause mid-bite.

“This tastes… weird,” she announced. “Did you put cinnamon in it?”

“Yes!” Mom said, smiling. “The recipe called for it.”

Lily squinted at her plate. “Sweet potatoes are already sweet. Why make them dessert-flavored vegetables? What’s next, chocolate-covered asparagus?”

Dad chuckled. “Don’t give her ideas.”

The green beans, poor things, sat untouched, a forest of ignored healthiness. Finally, Grandma, who had been silent the entire time, calmly picked one up with her fork.

  • 1 tsp dried oregano

  • ½ tsp salt

  • ½ tsp black pepper

For the Mashed Sweet Potatoes:

  • 4 medium sweet potatoes, peeled and cubed

  • 3 tbsp butter

  • 2 tbsp milk or cream

  • ½ tsp cinnamon (optional)

  • Salt, to taste

For the Green Beans:

  • 1 lb fresh green beans, trimmed

  • 1 tbsp olive oil or butter

  • 1 clove garlic, minced

  • Salt and pepper, to taste


Instructions

1. Prepare the Sweet Potatoes:

  • Place sweet potatoes in a pot of salted water. Boil until fork-tender, about 15–20 minutes.

  • Drain and mash with butter, milk, cinnamon, and salt. Keep warm.

2. Cook the Chicken:

  • Mix paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper in a small bowl.

  • Rub spice mix evenly over chicken breasts.

  • Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side until blackened and fully cooked (internal temp: 165°F / 74°C).

3. Make the Green Beans:

  • Steam or blanch beans for 3–4 minutes until crisp-tender.

  • Sauté in olive oil or butter with garlic for 2 minutes. Season with salt and pepper.

4. Serve:
Plate the blackened chicken alongside a scoop of mashed sweet potatoes and a serving of green beans. Garnish with fresh herbs if you’re feeling fancy (or trying to impress a skeptical family).
